1. In a large skillet, cook the sausage over medium heat until browned and no longer pink, breaking it up into crumbles as it cooks. Remove the sausage with a slotted spoon and set aside.
2. In the same skillet, add the sliced peppers and onions. Cook until they are softened and slightly caramelized, about 10-12 minutes.
3. Add the minced garlic, crushed tomatoes, dried basil, dried oregano, salt, and pepper. Stir to combine and bring to a simmer.
4. Return the cooked sausage to the skillet, stirring to combine. Reduce the heat to low and let it simmer for about 15-20 minutes to let the flavors meld together.
5. While the sausage and peppers are simmering, cook the tortellini according to package instructions. Drain well.
6. Add the cooked tortellini to the skillet, stirring to combine. Let it simmer for another 2-3 minutes so the tortellini can absorb some of the sauce.
7. Stir in the fresh basil and parsley just before serving.
8. Serve the sausage and pepper tortellini hot, topped with grated Parmesan cheese. Enjoy your fresh and flavorful meal!
